Corn & Basil Cakes
4 ears of corn, kernels cut from cob
1/2 onion, diced
1 jalapeno, diced
1/2 cup of basil, chopped
3 tbsp oat flour (or any flour of preference)
1/4 cup milk
Add all ingredients to a large bowl and mix well.
Heat a large frying pan on medium high and add 3-4 tbsp of olive oil. Scoop about 1/4 cup of mix on to the pan to fry. Cook 3-4 minutes each side until browns.
