Spinach, Orach, and Beet Greens or Chard Salad topped with Parmesan, Radishes and a Bergamot - Garl
Spinach, Orach, and Beet Greens or Chard Salad topped with Parmesan, Radishes and a Bergamot - Garlic Scape Vinaigrette
(Serves 2, so if making for more just multiply of course)
-Chopped Beet Greens
-Chopped Spring Lettuce
-4 radishes, to be served whole on salad serving bowls
-large Shavings of Parmigiano-Reggiano Cheese as a topping
-2 minced wild garlic scapes
-12-24 finely minced Bergamot (Bee Balm) leaves
-4 T of olive oil
-1/4-1/2 tsp pepper
-1 T-2T of finely shredded parmigiano-reggiano cheese
-1 T of white wine vinegar
-2 T of Blackberry, Raisin, Apple juice/syrup remaining from a fresh baked pie (secret ingredient), so if you do not have a fresh baked pie with juice on hand just take these 3 fruits, (the blackberries can be frozen) and slowly simmer after bringing to a boil to let reduce, plus add some raw honey as well when the fruits are reducing.
Shake or stir all the vinaigrette components well and then toss with greens.
If you like to make bread I would serve this with the Olive Bread Loaf Braids, as the vinaigrette makes for wonderful olive bread dipping as well!
