Apple Pear Cake
Ingredients:
(Part 1)
- 2 cups peeled tart apples, shredded
- 2 cups peeled pears, shredded
- 2 cups sugar
- 1-1/4 cups canola oil
- 1 cup raisins
- 1 cup chopped pecans
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
(Part 2)
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
CREAM CHEESE FROSTING:
- 3 ounces cream cheese, softened
- 3 cups confectioners’ sugar
- 1/4 cup butter, softened
- 2 tablespoons 2% milk
- 1/2 teaspoon vanilla extract
Directions:
- Preheat the oven to 325 degrees.
- In a large bowl, combine the Part 1 ingredients (fruit mixture). In a second bowl, combine dry ingredients in Part 2, and stir into the fruit mixture.
- Pour into a greased 13 x 9-in. baking pan. Bake at 325° until a toothpick inserted in the center comes out clean (approximately 1 hour). Cool completely on a wire rack.
- For frosting ~ In a large bowl, beat the cream cheese, confectioners’ sugar and butter until smooth, then beat in the milk and vanilla.
- Frost cake & store in the refrigerator until ready to serve.
