Apple Pear Cake

Ingredients:

(Part 1)

  • 2 cups peeled tart apples, shredded
  • 2 cups peeled pears, shredded
  • 2 cups sugar
  • 1-1/4 cups canola oil
  • 1 cup raisins
  • 1 cup chopped pecans
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract

(Part 2)

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

CREAM CHEESE FROSTING:

  • 3 ounces cream cheese, softened
  • 3 cups confectioners’ sugar
  • 1/4 cup butter, softened
  • 2 tablespoons 2% milk
  • 1/2 teaspoon vanilla extract

Directions:

  1. Preheat the oven to 325 degrees.
  2. In a large bowl, combine the Part 1 ingredients (fruit mixture). In a second bowl, combine dry ingredients in Part 2, and stir into the fruit mixture.
  3. Pour into a greased 13 x 9-in. baking pan. Bake at 325° until a toothpick inserted in the center comes out clean (approximately 1 hour). Cool completely on a wire rack.
  4. For frosting ~ In a large bowl, beat the cream cheese, confectioners’ sugar and butter until smooth, then beat in the milk and vanilla.
  5. Frost cake & store in the refrigerator until ready to serve.
