Blueberry Vinaigrette

This time of the season is the best because it feels like something new comes into its peak season each week. Last week, we started seeing fresh and juicy blueberries from North Carolina, and soon they’ll be coming in from closer to us. While blueberries are always a go-to snack on their own, you don’t often see these fruits incorporated into savory meals. This blueberry vinaigrette is simple, super tasty, and for some, a new way to use their farm market blueberries. With not much of a recipe, this dressing is a perfect way for anyone, even those who don’t cook, to add something special to dinner. Pair this bright, tangy, and flavorful dressing with a hearty green salad made with our spinach or our spring mix.

  • 1 pint of blueberries (stems removed)
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 1/2 cup olive oil

With a blender or food processor, add all ingredients and process until thoroughly combined. Taste for sweetness and acidity, add more honey or vinegar as needed (Note: Use a light hand when adding more. Less is more, especially with vinegar!)
