Chilled Melon Champagne Soup


Yields 5-6 servings depending on the size of the melon



  • 1 melon of choice, honeydew, cantaloupe or any musk melon will work chilled in the refrigerator
  • 1/4 – 1/2 cup of chilled champagne


  1. Cut up melon into large chunks. Blend melon chunks until smooth in a blender. Add champagne to taste and pulse a few times in the blender until combined. If you blend the champagne and the melon too long you will lose the frothy bubbles the champagne creates.
  2. Serve in chilled cocktail glasses or demitasse coups of choice as a starter.
