Corn & Basil Cakes

INGREDIENTS

  • 4 ears of corn, kernels cut from cob
  • 1/2 onion, diced
  • 1 jalapeno, diced
  • 1/2 cup of basil, chopped
  • 3 tbsp oat flour (or any flour of preference)
  • 1/4 cup milk
  • 4 eggs

DIRECTIONS

  1. Add all ingredients to a large bowl and mix well.
  2. Heat a large frying pan on medium high and add 3-4 tbsp of olive oil.  Scoop about 1/4 cup of mix on to the pan to fry.  Cook 3-4 minutes each side until browns.
  3. Eat and enjoy!
