Cucumber Feta Salad

This cucumber salad can be made with ingredients you can find at our CSA & roadside stands… And don’t forget to try our new sheep’s milk feta from Nordic Creamery in Wisconsin – you can find it at our roadside stands as part of our Gourmet selection!



  • 4 cups cucumber, seeds removed and sliced
  • 1/4 cup red onion, very thinly sliced
  • 1 avocado peeled, pit removed, then diced
  • 1/4 cup fresh dill, finely chopped
  • 1/2 cup feta cheese, crumbled


  • 1/4 cup olive oil
  • 2 tbs red wine vinegar
  • 1 tsp dijon mustard
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • salt & pepper to taste


  1. Place the cucumbers, red onion, avocado, dill and feta cheese in a large bowl.
  2. Place the olive oil, red wine vinegar, Dijon mustard, garlic powder, onion powder and salt and pepper in a small bowl.
  3. Whisk until combined.
  4. Pour the dressing over the vegetables and toss gently to coat.
  5. Serve!
