- 1.5 lb heirloom tomato
- 3 kirby cucumbers
- 6 mini bell peppers
- 3 tbsp garlic infused olive oil (regular olive oil also works)
- salt and pepper to taste
- small handful of basil
- Chop and slice the tomatoes, cucumbers, and bell peppers. Combine the vegetables in a large bowl, and mix in the olive oil.
- Season with salt and pepper, and garnish with fresh basil.
