Honey Apple Brioche Bread

Honeyed Apple & Brioche Bread Pudding


  • 1 lb brioche
  • 4 apples
  • ¼ cup honey
  • 4 TBSP butter
  • 1 TBSP vanilla extract
  • 1¼ cups cream
  • ¾ cup milk
  • ½ cup sugar
  • ½ tsp salt
  • ¼ tsp ground nutmeg
  • ½ tsp ground cinnamon
  • 5 eggs
  • 1 TBSP confectioner’s sugar
  • Vanilla ice cream (for serving)
  • Honey (for serving)


  1. Preheat oven to 350°F.
  2. Dice brioche into small one-inch cubes and set aside. Core apples and cut into thin wedges.
  3. In a frying pan, heat honey on medium-high temperature for approximately 3 – 5 minutes, or until caramelized. Stir in butter, add apple wedges, and toss to combine. Remove mixture from heat.
  4. Heat cream, milk, sugar, salt, ground nutmeg, ground cinnamon, and vanilla extract in a saucepan and whisk together. Remove from heat.
  5. Whisk eggs and combine with diced brioche, and along with the apple & honey mixture, and the cream mixture, combine everything in a large bowl, then transfer into a baking dish. Bake for approximately 25 – 30 minutes.
  6. Remove bread pudding from the oven, dust with confectioner’s sugar, and bake for approximately 3 more minutes at 440°F.
  7. Allow bread pudding to cool a bit, then serve with vanilla ice cream and a drizzle of honey.
  8. Serve & enjoy!
