Honeyed Apple & Brioche Bread Pudding
Ingredients:
- 1 lb brioche
- 4 apples
- ¼ cup honey
- 4 TBSP butter
- 1 TBSP vanilla extract
- 1¼ cups cream
- ¾ cup milk
- ½ cup sugar
- ½ tsp salt
- ¼ tsp ground nutmeg
- ½ tsp ground cinnamon
- 5 eggs
- 1 TBSP confectioner’s sugar
- Vanilla ice cream (for serving)
- Honey (for serving)
Directions:
- Preheat oven to 350°F.
- Dice brioche into small one-inch cubes and set aside. Core apples and cut into thin wedges.
- In a frying pan, heat honey on medium-high temperature for approximately 3 – 5 minutes, or until caramelized. Stir in butter, add apple wedges, and toss to combine. Remove mixture from heat.
- Heat cream, milk, sugar, salt, ground nutmeg, ground cinnamon, and vanilla extract in a saucepan and whisk together. Remove from heat.
- Whisk eggs and combine with diced brioche, and along with the apple & honey mixture, and the cream mixture, combine everything in a large bowl, then transfer into a baking dish. Bake for approximately 25 – 30 minutes.
- Remove bread pudding from the oven, dust with confectioner’s sugar, and bake for approximately 3 more minutes at 440°F.
- Allow bread pudding to cool a bit, then serve with vanilla ice cream and a drizzle of honey.
