Leftover Stuffing Breakfast Casserole

You can prepare this casserole the night before and cover & refrigerate overnight to bake in the morning. If you choose to do this, bring it to room temperature before baking (about 30 minutes on the counter). Or bake the casserole the night before and reheat it in the morning ~ it reheats beautifully!


  • 4-5 cups leftover stuffing*
  • 10 large eggs
  • ½ cup milk**
  • ½ cup grated cheese, such as sharp cheddar

* Sausage stuffing will make a heartier breakfast

** Use 2% or whole milk, or you can substitute chicken broth


  • Preheat the oven to 350°F. Spray 9×13 baking pan with cooking spray.
  • Spread leftover stuffing in the baking pan in an even layer.
  • In a large bowl, whisk together eggs, milk (or chicken stock) and half of the cheese.
  • Pour the egg mixture over the stuffing and top with remaining cheese.
  • Bake, uncovered, for 40-45 minutes, or until the eggs are fully cooked.
