Old-Fashioned Split Pea Soup
(Serves 4)
Made with green split peas from Zursun Idaho Heirloom Beans, these peas have a smooth texture when cooked,. They are perfect for this classic ham-based soup. You can also make a vegetarian version without the added bacon!
Ingredients:
- 1 cup dried green split peas, sorted and rinsed
- 2 tbsp. olive oil
- 1 small onion, chopped
- 2 cloves garlic, chopped
- ½ tsp. dried oregano
- salt and pepper to taste
- 2 large carrots, chopped
- 2 potatoes, peeled and chopped
- 4 cups chicken broth
- smoked bacon, cooked until brown and crisp, chopped (optional).
Instructions:
- In soup pot, sauté onion and garlic in olive oil for 3 minutes. Add oregano, salt and pepper and cook for an additional minute. Add carrots, potatoes, split peas and chicken broth. Bring to a boil, then reduce heat and simmer uncovered for 45 minutes to one hour, until peas are tender. Add salt and pepper for taste,. Garnish with bacon, if desired.
