This past week showed us all what a ‘scorcher’ really feels like, and all we can say was that it was an experience. Thankfully, the heatwave gave way and it is finally pleasant to walk around outside for more than just a few minutes again. If you are feeling inspired by these milder temperatures to have an outdoor meal, I highly suggest chopping up this colorful peach salsa to enjoy with some fish or chicken tacos or even just good old tortilla chips in the sunlight. The tangy citrus from the yellow peaches pairs like a dream with bold flavor that comes from the tomatoes. With red onions, this becomes a sweet and savory salsa that you can’t get enough of. It’s a refreshing combination of flavors and can feel like one of the only things you actually want to eat in this tremendous heat. This is very easy to assemble and stays completely cold which makes it a wonderful addition to your friends’ cookout or a family meal that needs a quick and satisfying appetizer.   • 2 ripe yellow peaches (peeled, diced) 
  • 1 large red tomato (diced) 
  • 1/2 cup red onion (diced) 
  • 1 jalapeño (seeded, diced) (optional) 
  • 1/2 of a lime (juiced) 
  • small bunch of cilantro 
  • pinch of salt 


  1. Chop tomato, peaches, jalapeño, and onion and combine together in a large mixing bowl. 
  2. Add salt and lime juice, adjust to taste preference. 
  3. Garnish with cilantro. Refrigerate for at least 15 minutes before serving to allow flavors to set.
