Thai Basil Cucumber Salad

A refreshing summer salad with crispy cucumbers, fresh Thai basil, a simple rice vinegar dressing, and topped with crunchy roasted peanuts.


  • 1/4 cup rice vinegar
  • 1-1/2 tablespoons sugar
  • 1 teaspoon toasted sesame oil
  • salt, to taste
  • 1 pound cucumber, sliced into about 1/4 inch rounds (peel, if desired)
  • 1/2 cup Thai basil leaves, roughly chopped
  • 1/4 cup roughly chopped roasted and salted peanuts


  1. In a large bowl, whisk together the rice vinegar, sugar, sesame oil, and a good pinch of salt. Toss in the cucumber and Thai basil leaves. Season with salt.
  2. Chill for about one hour.
  3. Transfer to a serving bowl and top with the peanuts.
  4. Serve & enjoy!
