Watermelon, Blueberry, Feta Salad

Try this perfect Fourth of July salad that is not only full of delicious fresh summer fruit, but is red, white, and blue, too! Every good barbecue needs a refreshing, crisp salad to accompany the proteins, and why not match the colors of the salad to the theme to make it even more fun while your? With herbs and crumbly feta paired with juicy watermelon and blueberries, we have the ideal combination of sweet and savory that everyone is going to love, even the kids. The dressing is simple but easily can be spiced up with some chili powder or a splash of your favorite vinegar or even left as just lime juice, whatever you’d like. Pair this with the cowboy caviar from last week and enjoy some uniquely tasty and healthy side dishes alongside your classic hamburgers and hotdogs.

Ingredients:

1 large watermelon (Cubed. Use 1/2 if making for a small group of people)

1.5 cups of blueberries

1/2 cup of crumbled feta

2 tablespoons mint leaves

1 tablespoon basil leaves

Dressing ingredients:

Juice from 1 lime (add more if desired)

1 tablespoon olive oil

1 tablespoon honey (add more or less if desired)

¼ teaspoon sea salt

Directions:

In a large bowl, toss together watermelons, blueberries, and feta.

Mix together dressing and fold into salad.

Add fresh herbs. Chill in the fridge until ready to eat.
