Zucchini and Corn Saute
With a seemingly endless supply of zucchini, squash and corn at our roadside stands this summer, try this easy side dish at your next cookout or barbeque!
INGREDIENTS:
- 2 Zucchini or squash (any variety), diced
- 3 Ears of Corn, shucked
- 1 TBSP Butter or olive oil
- 2 TBSP Fresh Basil, chopped
DIRECTIONS:
- Saute zucchini with butter or olive oil in a pan over medium high heat until soft, about 5 minutes.
- Add the corn and saute for an additional 2 minutes until the corn is cooked through.
- Turn off heat and add the basil, serve immediately.
