- 2 Zucchini (any variety will work), diced
- 3 Ears of Corn, shucked
- 1 TBSP Butter or olive oil
- 2 TBSP Fresh Basil, chopped
- Saute zucchini with butter in a pan over med high heat until soft, about 5 minutes.
- Add the corn and saute for an additional 2 minutes until the corn is cooked through.
- Turn off heat and add the basil, serve immediately.
