Zucchini & Tomato Summer Medley

You can find the ingredients for this recipe at our roadside stands! The zucchini and tomato mixture can be served as is, over fresh pasta, or on top of our sourdough bread!

INGREDIENTS:

  • 2-3 Zucchini (cut into 1-inch pieces)
  • 1 Large Onion (thinly sliced)
  • 1 Tomato (cut into small pieces) 
  • 6 Leaves of fresh basil 
  • Olive oil 
  • Salt and pepper (to taste) 
  • Feta cheese or mozzarella (optional)
  • Pasta (optional)
  • Sourdough bread (optional)

DIRECTIONS:

  1. Prep the vegetables and set aside.
  2. Coat the bottom of a large pot with enough olive oil to create a thin layer. 
  3. Add the sliced onions first. Allow them to cook until they begin to turn translucent. Then, add in the zucchini, tomato, basil, and salt (to taste).
  4. Cover the pot and allow to cook for 15 minutes, or until the vegetables become tender.
  5. Serve warm with feta cheese or mozzarella if desired.
  6. You can also serve this over fresh pasta, or on top of sourdough bread!
